⏰ Prep Time: 15 minutes | 🔥 Cook Time: 25 minutes
🌟 Ingredients
For the Steak Bites:
1.5 lbs (680g) sirloin steak, cut into 1-inch cubes
4 tbsp unsalted butter
4 garlic cloves, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme leaves
1 tsp smoked paprika
Salt and black pepper to taste
2 tbsp olive oil
For the Crispy Potatoes:
4 medium Yukon gold potatoes, cubed
3 tbsp grated Parmesan cheese
1 tsp garlic powder
1 tsp onion powder
2 tbsp olive oil
Fresh parsley, chopped (for garnish)
👩🍳 Instructions
1. Crispy Parmesan Potatoes:
Preheat oven to 425°F (220°C).
Toss cubed potatoes with olive oil, garlic powder, onion powder, salt, and pepper. Spread on a baking sheet.
Roast for 20–25 minutes, flipping halfway, until golden and crispy.
Sprinkle Parmesan cheese over the potatoes right after baking—let it melt slightly.
2. Garlic Butter Steak Bites:
Pat steak cubes dry and season generously with salt, pepper, and smoked paprika.
Heat olive oil in a skillet over medium-high heat. Sear steak bites in batches for 2–3 minutes per side until browned. Remove and set aside.
Reduce heat to medium. Melt butter in the same skillet. Add garlic, rosemary, and thyme. Sauté for 1–2 minutes until fragrant.
Return steak bites to the skillet and toss in the garlic butter sauce for 1 minute.
3. Serve:
Plate the crispy potatoes and top with steak bites. Drizzle extra garlic butter from the pan.
Garnish with fresh parsley and a sprinkle of Parmesan.
🎤 Chef Charlie’s Tips
Steak Doneness: For medium-rare, cook steak bites to 130°F (54°C). Adjust time for your preference!
Herb Swap: No fresh herbs? Use 1 tsp dried rosemary and thyme instead.
Potato Hack: Parboil potatoes for 5 minutes before roasting for extra crispiness!
